HELP...BRF w/horse poo...colonizing taking forever!! *pics

I have PESA BRF cakes cased with Horse poo. Temp: 75-78.
This is taking forever... about 3+ weeks already, my last grows only took like a few days to fully colonize... It looks like it's starting to take so long that 1 or 2 of the casing are starting to crack because they are getting dry. Should I Increase the humidity on it? And I have 2 casing that are like 85% done and some that are 15%...
Can I already start putting them into fruiting stage? Or wait...ugh..
Whats should I do...

what you have is PESA BRF cakes spawned into a bulk substrate(horse poo).
do you have some holes in the alum foil that is covering your bulk substrate?
maybe your moisture content was off when you made up the horse poo.
you don't wanna put those into your fruiting chamber til they are fully colonized...
and you might wanna put a casing layer on them before doing that.

I've read your tek lots of times... I've done these casings before from your tek... and I never had this problem before...
oh yea, I also dunked the BRF cakes before casing, for hydration.
Should I increase the humidity with still no light? or leave it as is...
Can you tell from looking at my pictures if it's getting to dry?

back to your problem.
holes in alum foil cover...check!~
not a casing per say...it's a colonizing bulk substrate.
do you think it's possible that your moisture content is off? too wet or too dry and it won't colonize fully. when making up your horse poo you should only be able to squeeze a couple drops of water out of it with your hand... and then you know the moisure content is right.
humidity isn't a factor at this point... worry about humidity when you get to the fruiting stage.
light isn't needed yet either.
from looking at your pictures it doesn't look too dry... if you have a pair of sterile surgical gloves take a pinch of horse poo off one of the trays... and pinch it and see what the water content is like.
I am concerned that the water content of the horse poo is too wet... if you haven't noticed.
Is there any funky smell coming from any of the trays?
How much colonized substrate did you put into each container? Is it possible that you didn't use enough spawn?
answer these questions so we can try and help you better.
