 Home brew Ginger beer!

2 cups sugar
2 lemons
6 quarts warm water
1/4 tsp dry bakers yeast (or your favorite brewers yeast)
1 cup warm water
1 tablespoon cream of tartar
2 tablespoons dried ginger ( or 1 oz fresh ginger )
Mix sugar and juice of the lemons in a large bowl. Pour in 6 quarts warm water, and stir well to dissolve sugar. Let stand until tepid. While mixture is cooling, dissolve yeast in 1 cup warm water, and add to cream of tartar and ginger. Add this to sugar mixture, and stir thoroughly. pour into 12-once bottles for carbonated beverages, and seal with crown caps. Lay bottles on their sides in a cool place for 5 to 10 days. Beer is then ready to serve. Makes 16 12-ounce bottles.
I am making a batch as I type this. I will have a report as soon as it is ready!

Tasty. I have only had it a few times but ginger beer is awesome. The only place around here that sells it is an Australian bakery. Tell us how it tastes.

My dad used to brew this stuff up in his locker at boarding school. Then he bottled it in flip top bottles and sold it to his schoolmates.
He nearly got caught in the end because he had sold half a dozen bottles to the school coir and they turned up drunk to sing for service in front of the whole school and collapsed in a laughing drunken mess.
The headmaster didn't allow anyone to leave the school chapel while the teachers went to search the lockers. Luckily he managed to sneak out (said he needed the bathroom badly due to an upset stomach) and dump all the contents of his locker out of a window before the search started.
He says nothing ever grew in that flowerbed since ROFL

im behind the curve here, whats the yeast eating exactly / fermentation takes only 5-10 days in this particular recipe, or even the rye/wheat recipes? thank you

the yeast is eating the sugar. i'm pretty sure fermentation only takes 5-10 days because it's primarily concerned with carbonating the drink, rather than bulking alcohol content.

I've tried brewing home-made ginger beer and it's never been particularly successful.
The resulting drink always tasted yeasty.
I think the problem is this - ginger beer was never intended to be brewed with just yeast. The reaction that carbonates the drink during the brewing process was originally performed by a "ginger beer plant" - a symbiotic relationship of a specific yeast strain and a bacteria. I've never been able to obtain a sample of this substance.
Baker's yeast or brewing yeast just isn't suitable for making ginger beer, IME.

I just bottled it tonight. I tasted some when siphoning from the carboy. It does taste yeasty as hell, but not too bad.
I am going down to the local brewers store monday and getting some good yeast, a sugar loaf, and some fresh ginger and lemons. Apparently using the sugar loaf makes a big difference in the end product.

Ok, I just cracked open and drank the first bottle.
It has a fair amount of head when pouring.
I could have added more ginger for my taste, but it does have a good bite. It was also just sweet enough.
But it was yeasty. Not as bad as I thought it was going to be.
Let's see what happens next batch.
