Question

Well i pressure cooked my jars last night and when i was putting the water in i put about an inch of water than i put the jars in and it raised the water level up about halfway on the jars. I was a lil concerned so i took a bit of water out lowering the level again to about and inch high and PC'd em anyway but when they got done i opened the PC'er and the jars had water stains on the tops of em and i was using foil as a lid if water reached the top then im assuming it got into the jars. Do u think that their water content was altered by this, they had 4 layers worth of tight foil lids. Should i start over as i havent knocked em up yet, and use less water to compensate for the water thats being displaced by the jars?
Also, im a first timer, are the PC'ed jars supposed to have a weird bitter smell to them, cause these things stink

water stains on top of what the tin foil . if thats the case there usually is water stains on foil after pressure cooker thats why you put them there in the first place . If you put the foil on and wrapped it tight around the lids and seeing water on foils that is normal , you shouldn't be seeing water sitting in your jars . about the bitter smell don't know what youre talking about it should just smell like cooked grains . but there is no way something might happen while still within the pc =) did you use empty jars , or some jars (sauce etc ...) if you used jars that you have just emptied and clean sometimes there can be a lil bit of smell of what was in there .

tilt the jar and see if you can see any water accumulate at the bottom of the jar

Use less water for the next time you are PCing something. Like the autoclave, the idea is to sterilize with dry steam.

I doubt water got into the jars by the way you explained everything. The spots on the foil are likely from the drops of water coming off of the lid during PC'ing. Did you use some kind of tray to put your jars on? You didn't mention it and it sounds like you just placed them on the bottom of the PC. This can and eventually will cause jars to crack due to the high heat on the bottom of the PC.

FooMan... the jars will crack no because the heat in the bottom.
Actually the steam posses more heat than the water, but, the reason is the difference of heat (boiling water, steam), this causes two different dilatation in the glass and eventually, the crack of jars.
As I say, the best is to work only with the steam, like the Autoclave.

thanks for all the replies guys it wasnt what i was expecting to hear, although i do always think worst case scenario. i guess im good to go, they dont have any pooling water in them or anything when tilted and im pretty sure i've identified the smell as cooked grains time to knock these bitches up
p.s. i did use a cooking rack im on top of this lol

Not quite. The water and the steam are at the same temperature. The jars crack because of the extreme heat from the stove burner being conducted through the base directly to the glass if it's not raised up off the bottom. RR

Thank you for explaining that better than I did.

I know exactly what your talkin about when you say sour smell. Dont worry that goes away after a while. Either that or you get used to it. I had the same smell with my jars even after i knocked em up, but it went away.
