Which casing layer?

I consider applying a casing layer to my PF-cakes. I've read several procedures on this page http://www.shroomery.org/20/Casing-Procedures, but I find a little difficult to choose one of them. Of course, I'm interested in large(r) fruits, yet I do find it more important to keep the risk of contamination as low as possible. So which method is the safest method in terms of contamination risk?

There's really not much benefit to casing PF cakes. Dunking them and rolling in vermiculite is the preferable option.
If increased yields are the objective, consider spawning them to a bulk substrate (ie. h/poo, coir, straw, etc.).

50/50 verm peat moss mix is a good casting layer

You could always try the Sea of shrooms if you really want to case your cakes. You can search for it, but its basically cutting your cakes in two and placing each half in a solo cup with verm on top.

Do none of that, especially that sea of shrooms thing. Verm on it's own isn't the best of casing materials.
You will get the same final weight (or even a bit more) by just dunking and rolling your cakes. it is also the fastest and safest way to get results.

nebula, just dunk and roll your cakes until you get the hang of it
-------------------- Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.
