Ok, so this is my first grow so I'm not to familiar with the subject. I inoculated about 3 weeks ago with some ecuador spores, and now, about 2 of 7 jars look like they are completely colonized. The other five are close behind at about 75% colonized. I have read in some places that it is necessary to wait one week after full colonization to birth the cakes. Other sites places state it is ok to birth right when the colonization appears to be finished. I was wondering if I really have to wait an extra week. I know it's just noob impatience, but I wanna get these shrooms going. What should I do? Also I was wondering should I take the lids off the jars for air exchange, or just leave the inoculation holes uncovered?

You do not HAVE to wait a week- but if your not 100% colonized you will yeild less and could contam during fruiting easier than normal.
Leave your lids as is unless you belive your stalling(a few weeks without growth) - sometimes you can unscrew them a little to increase the fresh air exchange. Before removing the lids, try flipping your jars upside down for the final strech, you will notice a major difference.

Would you rather wait another 6 weeks for new jars to colonize and fruit, because you couldn't wait for a couple more days?
As far as your lids are concerned, leave the lids on there, but if you're waiting on the bottoms to colonize try just flipping the jar over and getting some of that CO2 out of there. Also, if you have any foil or tape over your holes, take it off, provided there is the standard verm barrier on top of your sub.
Good luck.
