best way to cook oysters?

i got some oysters today and wanted to know what is the best way to cook them? or are they better fresh?

I have never found a wrong way to cook them, however, if they are mixed in as an ingredient, I tend to chop them up small so their texture is not so over-powering for those that love mushrooms just a little less than I do.

i like to crisp some bacon...save the fat. then saute the oysters in some of the bacon fat with chopped shallot and fresh taragon and deglaze the pan with a shot of white anisette or pernod liquer. add a handful of fresh spinach and stir to wilt it with the hot mushrooms and shallots.
i like to serve this over grilled chicken breasts.

I have tried oyster mushrooms raw but found them distinctly unappealing, wich is interesting, because they are one of my favorites when fried or cooked in stews.

I hate most mushrooms raw. They're nasty. Oysters are great as greysRDbest describes. A bit healthier method would be to use olive oil, but bacon grease is sinfully good. If you saute them like that with red wine, they can be added to spaghetti or lasagna. Cook them at high heat. Cut off the stems and use only the caps. The stems are tough and strong tasting. Always drain the liquid off after cooking the mushrooms and save for soup or toss out. It can tend to make the whole dish have a mushroomy taste, ruining it.
