just dont birth them, they will wait. and if you already have, hook up a fish tank air pump and a light to a timer and let them grow while you are gone, the worst thing they could do is drop spores as long as you wont be gone for more than a week.
also, saying you dont have time to use the search tool isnt really a good way to earn any respect around here, or to get your future questions answered for that matter.

What does ready to go mean? You've taken them out of their jars and they're sitting in the fruiting chamber? How far along are they with the pinning process, how long ago did you birth them, etc.? That'll help you get some advice.

From my reading, you can store it in the fridge so long as there is not a large amount of fluctuation in temperature. Cold then warm, cold then warm, culture will die. It all depends on the strain you are working with. But for the most general part of your question, yes cooling will slow down the growth. Just be clean about it.

leave them at room temp in a dark place. the refrigerator isnt really nesasarry. i just found 11 quart jars i forgot about in my closet that were in a brown paper bag about a week ago and i spawned them and i am 1 day from full colonization, the jars were labeled as 9 months old.

I've read in some of post from advanced myc. That many belive that older spawn and older cakes produce higher potency shrooms from what I remeber there was talk of 6 month old cake but that might have been for purposes of argument and not an acutual cake.

Just wrap em in film so they don't dry out and pop em in the fridge.
