Garlicky chipotle scrambled eggs

Hello!

I just made a pretty tasty set of scrambled eggs and thought I would share with ya'll.

Mix up 2 eggs with a tablespoon of water or so, few pinches of salt (to taste), one chipotle pepper in adobo sauce (might want to mince, I just chopped), and a few shakes of garlic powder. Pour into hot buttered pan and scramble!

It almost smelled like I was cooking up sausage, which is weird since I'm a vegetarian. But obviously you can alter any of it - more chipotle for more heat (this was a little hot and I have a moderate tolerance to spiciness) or more garlic flavor. I also put a few grinds of pepper in but I'm not sure that's necessary. I was trying to think of other things that could be added but it was quite satisfying the way it was. Though if you find a different way to prepare these post it up!

Sounds good! But you shouldn't put salt in eggs until after they are cooked. Something about it breaks down the proteins or something. Now all it needs is cheese!

Well the proteins get broken down (denatured) like mad anyway, which is what makes cooked eggs hard.

Salting before cooking may change the cooking or flavor somehow, but it's how I learned from cookbooks and it's always worked out for me        :thumbup:
