Clarification needed on long-term mushroom storage

Spent the last 10 minutes or so searching the posts on long-term storage, but didn't quite find the answer I'm looking for. My friend is wanting to store a good amount of fan dried mushrooms in a quart-sized Ball masonry jar, however he will not be able to grind them to a powder so he will have to stuff as many in as possible before capping the lid, then wrapping in plastic wrap and finally tinfoil. This will surely leave some air left in the jar.

My question is whether or not that bit of air left in the masonry jar will cause problems later on. Planned length of storage is between 6 months to 1 year. Once stuffed with the fan dried mushrooms, would placing masonry jar in the freezer rather than at room temp increase storage duration?

yes freezer works well if your mushrooms are FULLY dried... give them a really good drying. If you like the taste of honey, cut the dried fruits into cubes or chunks and let them sit in a jar completely covered with honey. makes a blue blueberry jam looking trip-sauce. YUM.

add into the jar a couple of bags of dissecant and a couple of those oxigen eaters you get inside jerky.

that or make CO2 via baking soda and vinegar and fill your jars with CO2. that will eliminate oxygen and oxidation in general. just put baking soda and vinegar into a bottle and let it react. the resulting gases inside the bottle will be CO2 and you can just pour the invisible gas into the jar like you would be pouring anything else out of a bottle. to test if you have CO2 in the bottle just light a match and slowly lower it into the jar (fire needs oxygen to stay lit), if the match goes out you know the jar is filled with CO2.

That's what I was thinking. A pack of desiccant in the jar should make sure things are fine if they're dry already.

There it is. To answer your question, you kind of have to understand the mechanics of decomposition. Long story short, decay uses oxygen and creates CO2. Flood your storage container with CO2 and don't give decomposition/bacteria/mold any chance. It's heavier than O2 so you could "pour" the gas into your bin as long as you have a still air environment, which you do (glove box). Good luck!

My friend had them in freezer for a few hours, but just took them out based on your comment. Can anyone else verify that it is better to keep them @ room temp rather than in the freezer.

Couldn't track down any desiccant bags so the fan dried mushrooms were stuffed into a pint masonry jar wraped in suran wrap w/ a rubber band aroudn the rim, and tinfoil. They are now sitting in the closet.

like the above posters said, that isn't a good idea they will decompose in that amount of time that you want to store them, get desiccant from a motrin bottle or something and put that in the jar along with the mushies.

If storing long tern your going to want to use some kind of Desiccant after you air dry. if you just air dry there will still be moisture in the mushy. and then they will mold.

why shouldnt you put mushrooms in the freezer? ive never heard that..in fact after using the search i found a couple different threads where people claim that it works. as long as they are BONE dry. but i dont know so i am going to try it and post results in a few months. if there is evidence that this is a dumb move someone please tell me before i waste perfectly good mushrooms. thanks.

a response from one of the mushroom gods would help allot here.

If they are bone dry and in a perfectly sealed container there will be no problem but one little bit of humidity or air getting in and you will get freezer burn.

Even if you put em in the freezer, add a bag of dissecant (or make it yourself with a coffee filter and some dissecant) and some oxygen gobblers.

They'll store for many years in vacuum sealed bags without degradation, even at room temperature.
