why is it important not to go over 180 f

I remember someone saying not to go over 180 f when you are making
the straw.Why is this????What does it do to the straw if it does go over???

if it goes over it can kill off good bacteria that helps keep your manure contam free. also it can cause bacterial bloom. its important to be around 170-175
