Stir fry, "box dinners", frozen lasagna things, always good cheap choices and easy to make.

It pretty much is.

Sadly eating healthy is much cheeper in the long run than eating crap.

Thats pretty much my diet in a nutshell.

Frozen vegetables = Key.

Get some veggies that will still be good at the end of the week--carrots, cauliflower, cabbage and beets last longer than leafy greens, asparagus, broccoli
I usually try to make stuff in the beginning of the week that will make good leftovers at the end of the week when I am tired of cooking. For example, fish on monday can be fishcakes on wednesday. Pasta with sauce can be pasta casserole if you add some cheese and bake it. A rotisserie chicken from the supermarket can be turned into several meals--eat 1/4 for dinner one night and then you can pull off the rest of the meat, mix with some canned black beans and roll into tortillas, cover with enchilada sauce and cheese and make enchiladas. The carcass can make a good soup by simmering it in some canned low-sodium broth with carrots, celery and add some rice or noodles, some dill or parsley.

If you roast a bunch of vegetables like beets or a few butternut squashes you can eat those in a myriad of ways. All you have to do to roast beets is wash them, wrap them in tin foil and bake for 45 minutes or so depending how big they are, let them cool and the skins should slip right off. Serve them with raw spinach, goat cheese and pine nuts with a vinaigrette dressing. Beets are also great with cooked egg noodles, butter and poppy seeds sauteed in a pan.
For squash, peel and halve it, take out the seeds and toss lightly with olive oil, salt and pepper. Bake for about 35 minutes at 375.

I love to cook but I'm really lazy so I rely on my well-stocked pantry of basic ingredients (grains, herbs, canned things like beans and artichokes, roasted peppers, etc) I buy everything I can at the farmer's market and do as little as possible to it (roast, bake, mash, sautee or serve raw) and most of the time it's surprisingly frugal and rewarding to just go for convenience--like buying a rotisserie chicken for $7 and getting 3 dinners out of it is classic.

Once you get into it, you'll be amazed at the kind of meals you can pull out of thin air.

Right now I have this stuff for the week ahead:

meat: pork tenderloin, 2x strip steak, 2 packages of bonesless skinless chicken tenderloins, turkey breast

vegetables: spinach, and more spinach

fruit: bananas and apples

drink: skim milk, coffee, tea, water

misc stuff: whole grain flax bread, oats, eggs, peanut butter, whole grain tortillas, refried beans, almonds

This ought to get me through finals week, but I dunno, I've been eating alot lately.  :sun:

Definitely take advantage of leftovers as champ mentioned. I make soup like mad, which you can just freeze and thaw when needed.

I pretty much always have a few things around that require basically no preparation like eggs and PB&Js, which are still really good. Surprising, PB&Js on good bread with good jam (homemade) is really a great meal.

As far as drinks go, I have been making iced tea in a liter or so container. What's nice is you can make it concentrated and dilute it with water when you want to drink some, which makes it last a loooonnnggg time with no noticeable degradation in quality. It's really great having a tasty beverage around at all times that's not carbonated or completely sugar-laden. And it has antioxidants - think of the antioxidants!!

Iced tea has never really done it for me. It just tastes like plain water.

It depends on what kind of tea your making and what kind of tea...as in, do you use lipton iced tea? or do you make real iced tea by steeping it then adding ice & refridgerating? Do you make herbal iced tea or something crazy?

Black tea has a very strong flavor, which is why it's common as an iced tea. Maybe start with that and if you like it spread out from there. The tea that I was talking about is a peach and ginger black tea.

Otherwise just steep it strong! put like 4 bags in per liter or like a quarter cup of loose leaf. You can also add sugar to tea if you want it more juice like - a friend made some peach tea with like a tablespoon of sugar or some gargantuan amount but it was really good & sweet.
