Is it possible to colonise a couple of jars and then put them into storage for a few weeks before fruiting? Problem is, I'm going overseas soon, and I don't think I'll have enough time.

Yes, it is possible. Fully colonized jars can last for months in a FROST FREE refrigerator for later use. It will take some time for the mycelium to recover after removing the jars from cold storage, but it can work. Remember to tape over your holes before refrigerating if this is the course of action chosen.
With that said, you should probably just wait until you return. It only takes a couple of weeks to colonize a properly hydrated jar of grain.

You should look into this shroomerite named fahtster. RR loves him and I think that stands for something. Anyway, I was randomly reading some of fahtsters posts and apparently he does something like dry out tiny 1/4 pint jars partially filled with rye and makes a slurry out of it later. This is a way of preserving the mycelium for later use. This may be of use to you, but I don't know if you could do this with cakes. You may be able to take a slice off later and rehydrate it then spawn to something else. I don't know a great deal about fungi yet, so take this as you will. Hopefully you can find some use... yeah, check out fahtster!

Oh, if you chose to do this you must customize the lids you plan on using as per fahtsters instruction. This seems essential for this to work. I'll see if I can find you a link...

Just cover the jars and pop them in the fridge. No problem.
For more info do a search with keywords store jars fridge or something similar.
