funny smell

hey guys, so basically i went to make two casings using 4 fully colonized 1/2 pint BRF jars. i had given them a week after full colonization before i went to case. When i smelled them they all smelled perfectly fine. then when i went to break them up for the casing they started smelling very sour.. I'm relatively new to this, so i'm not sure what that signifies.. any ideas?
also, i have a set of pint size jars on the go, and i opened one of them the other day to smell to make sure everything was going alright and nearly fainted.. it smelled like somebody had farted in a jar 100 years ago and it had fermented into a horrible stink cloud.. this doesn't seem too good too me, but could it maybe be poor air exchange??

you should never open a jar unless you are going to birth it
did you use the verm barrier? sour smells usually go along with rot, which usually means bacterial contamination
FAE isn't very important for BRF cakes in the jar still, so i doubt that is it it's likely a problem in your sterile technique

yes, i do use the dry verm top layer.. i've done several batches before the exact same way, and have never had this problem before

A sour smell indicatees the pressence of bacteria.
Which can happen with overly wet substrates, the verm barrier gets damp and contams can grow through it. or thru improper sterilisation.
Are you pressure cooking or boiling??
While i dont think its a good idea to take the lid off. I have read rr saying that u can take the lid of the jar i u need too. The verm layer is the contam barrier. The lid merly keeps the moisture in the jar.
If they are contamed then they will be no good for casing.
Myc and fruit generaly doesnt eat up the contam and pass on poisens to the fruit(myc may try and fight it, producing lots of metobolites), but it would be better to start from fresh.
I would toss it and start over, a freshly birthed jar of substrate should smell really earthy and mushroomy, not sour.

yeah, i do not pressure cook them, i just boil them in a pot. From what you have said it seems like my problem was the jars were a little on the wet side, and so the top layer of dry vermiculite became damp and passed bacteria to the cake.. thanks for the help!

Its better to be slightly dry than wet, it can slow colinisation down aswell. But of coarse if you go too dry, then the spores might not germinate or growth stalls. You will get the moisture content down soon.
It took me till about my 4th batch before i got it right, luckily though i wasnt too wet and my jars colinised but they took ages.
2 parts verm, 1 part water, 1 part brf. I have found that using measuring cups gives the most accuracy. The substrate should be light and fluffy and have a light color.
