chinese water-dumplings (szwei-jiaou)

these are delicious.
minced pork + chopped chinese-chives (chyiou tsai) mixed together. dumplings made with bought pastry (wet the edges so they stick together) and put on a floured plate: . .
while these are boiling in water for 15 mins (hundreds more are freezing, separated initially, and will keep forever ) the dip is made: couple cloves garlic, crushed. pinch of chilli powder. splash of sesame oil. soy sauce. that's it! . .

would u be able to give the full recipe...i.e. how much minced pork etc...do u have a recipe for the dough by any chance?

one dollop minced pork (about a pound?). some chives (?cucumber-sort-of-volume), chopped with a cleaver. keep adding the chives and mixing until it looks a bit like in the picture.
the dough we buy in chinatown in packets ('dumpling pastry') - by far the easiest way. but there is a recipe for the brave: can you read chinese? if so, i'll scan it in

They also come pre made in the freezer section. I can't remember the name of a good brand, but they aren't bad. I'm just lazy.

I hate buying stuff frozen, sounds like them's be pretty damn easy to make too....How do you knmow when there down boiling? do they float?

My mom is chinese and used to make those for me all the time when I was little! Looks like you got a tasty thing going on there.

Ohhhh MAN that looks delicious!
Reminds me of the stuff mom used to make back home...
There is SOOO much shit you can do with those dumplings, different textures, different fillings, etc etc.
Dumpling soup, fried dumplings, put that shit on a bed of rice with some kim chi.
I like to have a dipping sauce for those things, it consists of:
-2 tea spoons of sesame oil -5 table spoons of soy sauce -a tea spoon of chiracha(sp) chili flakes, or any other red chili paste you may have laying around.

Just made dumplings again tonight.
I make em with chicken or pork and pour a a spicy sauce over top.
Tonight was pork.
