Depends what you want to use if for. I have heard that it is a bad idea to modify them to supply the mist via a hose into your FC. They last longer unmodified and simply sitting in a greenhouse.
For smaller fruiting chambers perlite works great.
Also, i think the ultrasonic coolmists are better. You can always try it out and measure the humidity. Note that you may have to put it onto a timer so you dont saturate everything.
Waht are yoy using, cakes or casings??
If your using casings on a small scale, in a small fruiting chamber then perlite is more than ideal as you can still get good results with the humidity at 90-92% as long as you keep the casing layer moist.
If you can get your humidity upto 99% without lots of standing water forming everywhere then thats pretty much ideal, but its very hard to acheive with small fruiting chambers with an automated setup, which is why perlite is recomended.

Not necessarily. There are wick-type and impeller type cool-mists.
The wick type uses an evaporative wicking system to produce humidity. Not only does it not produce enough humidity, but the wick is a breeding ground for contamination.
The impeller type is what you want. It has a motor-driven impeller which draws up water through its pickup tube into the vortex chamber. The chamber creates extreme pressure, breaking up the water into a superfine mist which is directed into the fruiting chamber. I think most honeywells are impeller type. Another good choice would be:
 Vicks V400
