casing question?

i have a casing from two crumbled cakes cased with 50/50+
its been in fruiting chamber for four or five days. knots are forming on top.

today i checked it and there are pins on the side coming from where the crumbled cakes are.
they are meaty too.

should i take the whole thing out of tray. or just let them grow and pick them later.

thanks for any suggestions.
