What is the temperature and duration for a proper steam pasteurizing?

For pasteurizing a 50/50 casing mix using live steam......

What temps do you wanna hit and for how long? I was thinking 150deg for one hour.....?

Last run I let the casing (accidentally) get up to 180deg for an hour and I got a lot of little mushrooms - but no contam at all though. Preserve the microflora a wise man once said.

I think its between 170-175F for 1 hour.

That wouldnt cause small mushrooms, lack of moisture does (and genetics)

140-170 not exceding 180 is the proper temperatures

Pasteurization temps are 140F to 160F for one hour. This temp should be measured at the core. I would recommend against using steam, as it's more likely to partially sterilize than pasteurize.

Thanks for the answers to my question. I use steam because that is what I have..... I do understand that it is more likely to sterilize as the steam is very hot and tends to overheat the outer by the time it brings the core to 150.... The only way to try to avoid this is to bring it to temp slowly over time... Thanks
