This is Psilocybe atlantis sclerotia. These jars started looking a bit weird after low ambient temps prompted me to put them in a TIT incubator. This resulted in some "sweating" and discoloring of the sclerotia which had previously been a healthy yellow/cream colour.

Would I be putting myself at risk by eating this sclerotia? The white spots (only in one jar) worries me most. I'll definitely give that one a miss. Could the others just be bruising from excess moisture?

Absolutely. Those look healthy, and ready to eat. Of course you know the bluing is from oxidation of the actives, which means you've waited a bit too long to harvest (it's drying out), but those look very good. You should have a nice yield.

There is one pic I'm concerned about. Looks like some kind of possible contamination. The one with the numerous white specks. Maybe some sclerotia guru will lend a hand.

but it's strange that the other jars which are the same age (3 months) aren't discolored at all. See below

Your fine. My Atlantis looked real fucked up and darkish.
Nice yields compared to mine btw.
