Pinning shouldn't occur unless the mycelium is introduced to pinning triggers, such as High RH, FAE, and 12/12 light. You may get some in vitro pins, but don't worry about it. As far as your cakes shrinking up a little bit, that's ok. The mycelium is just eating up the nutes and consolidating it's hold a little. The bottom of that cake looks like it needs some more time, so let it go. The rule of thumb is it's not fully colonized until 5-7 days after it appears so.
