Which oyster should I buy?

I am going to pick up an oyster along with lions maine and sra. I am choosing oyster because I know it will be super easy and i want something that will fruit quickly. Which one has the best taste? I have only had oyster in chinese food but I did not know the species. I will be getting this from sporeworks.com.

Phoenix is the easiest/fastest but the Blue and Pearl are meatier. I don't care for the taste of the pinks or yellow and they are thinner fleshed, but they are also pretty easy and fast to grow.

I have a few oak trees that are not doing so hot so i was going to try to plug a few of those. I also have a neighbors cottonwood that is lift my walkway with its roots. I want to plug the roots and see what happens. I do not know if cottonwood is a good substrate but the tree has to go regaurdless. Its a weed tree and the neighbors do not care if I kill it

I doubt you'll get the oysters to grow on a live tree. You could cut it into 4' logs and stack them up for great results though. Cottonwood should work fine, as will Oak. I've used both. RR

Yeah, oysters won't colonize a live tree in my experience. You could girdle it first.

The only thing with cottonwood is its extremely thick bark. In my experience, it also has a tendency to peel or fall off easily. Make sure to adjust drill depth to compensate and use a nail set to get the dowels all the way in.
If I dig around enough I have a picture of a huge eastern cottonwood, about 3feet in diameter, nearly taking out my brand new (to me, it was used) toyota tacoma.
We slightly under-estimated its height.
