casings and Ph level changes

SO I have been using a 50/50 casing since I started out ..I use calcium carbonate , crushed oyster shells and recently started using hydrated lime..

I got my last batch up to about 7.75 almost 8 ok no biggie

I had some trouble with the casing layer not colonizing after about a week and decided to scrape one tub ..

I check the ph level of the casing and its 5.75....??
so I recheck the left over casing material that I have in a bag and thats at 7.0

Am I to understand that after just a week the myc has lowered the ph a full 2 points??

so if I did let this stay on the tub would it be even lower later ..I thought the the ling term buffer would keep this form happening

any thoughts ??

From your list of ingredients, it appears you forgot the most important one for pH stability. . .Gypsum.
