how to correctly fry up/bake falafel

i've tried iron skillets with olive oil/butter, teflon, and baking on glass and metal
can't get it to cook up at all like restaurants or booths at festivals
how do you cook it the whole way through and brown all around?

Deep fry?
I eat falafel all the time, and I've always assumed they're deep fried.

There's a spot here called Chickpea that closed for 2 weeks...when they reopned they had switched from frying their falafel to baking it. They put it on one of those conveyor belts sort of like they put bagels on in diners. Honestly it does NOT taste anywhere near as good as fried falafel.

It is delicious.
I was stoned and watching the television the other night about a dhosa cart in NYC someplace. Central Park, maybe?
It looked awesome. The street food in this city is pretty lame.

well, they don't deep fry the falafel at festivals, and that's really how i'd like to make it (but no griddle). now i'd imagine that yea, they deep fry it at most restaurants
i agree omr, baking it doesn't taste as well

ok, so i tried it again a few times today.
seems to work best heating up the iron skillet for ~15 mins. on medium or less heat. then add 1/2 tbs butter, and a few tablespoons of olive oil. next time i'm going to try using less oil/fat. cooked on high heat but will try lower heats. pressing them down seems to help, so long as they don't burn to he iron (which makes a mess cleaning up after)
going to work on this. falafel has been nice to keep on hand as it's a fairly quick snack/meal and easy to add to a meal. i've made too much these last two times, so smaller batches are in order and will be easier to make. i'm concerned with using that much oil and fat, but i'm also using a 10" skillet, i'll try it with the 7", which has a better seasoning from longer use.
any idea how long fermented chick peas will hold in the fridge? i've had this bowl now for about a week and it hasn't noticably upset my stomach or anything.

After I got good at making falafel I branched out to fritters of all kinds. Veggie/Bean burgers are really just extremely large fritters.
If you've ever had Morningstar foods Broccoli Bites I make a mean homemade version.

It seems like mine always fall apart in the oil. Does anyone have a recipe that might work better? Maybe I'm just not getting the oil hot enough before I put them in.

Your oil is too hot. Your making scrambled eggs instead of an omelet. If you use a skillet, they shouldn't start sizzling for a few seconds. If you deep fry, they should sink, then bubble, then float up to the top.

350F is usually med to med high on a gas stove. High is WAY WAY WAY too hot.

I was watching this place on TV where they made falafel, and they had this falafel ball maker thing. I guess you have to pack it really tight. They gently rested it in the fryer basket, and then gently lowered it just so the oil would barely cover the falafel. After a few seconds to let it set on the outside, they dropped it in fully to finish cooking. Maybe a technique to try out.

YidakiMan and daussaulit are my Heroes for the Weekend. Oil was too hot, I tried starting on med-low and bringing it up from there. Everything held together and was delicious.
The down-side is that now that I can make my own falafel I'm going to gain 800lbs and be one of those people they have to take the side of the house off of to get at. Watch for me on the news, I'll be the one struggling to wave my beefy arm at the camera from my overflowing stretcher.

cool, i'm glad this worked.
i will probably be making more after exams, but i also broke my 'unbreakable' blender mug today, so it might be more work than before
