Yeah, they really won't assume shit. Its not like you're using some giant lighting/heating system that'd suck up electrical resources like a marijuana op would require. If you were using one that large, it'd be one hell of a mush op.

Started my first grow in november-failed miserably and had to throw 5/8 jars out-substrate was soaked.
Knocked up (5) pint jars a few days ago. Just had a cold snap, it gets 52F outside, but usually stays 60-65F inside...Sloooow Progresss

try using a tit with holes drilled into the interior tub, submersible heater, and a pump as a fc. that's what this guy i know just did and it's working great.

IME during the winter, controlling humidity is harder than controlling temps. In a perlite PMP, it's just a lot easier to start with incoming air that has SOME moisture in it.

If you not growing outside and you have heat in your house then things will be fine.

Build yourself a Tit incubator, look on the main page of the site for the information on how to do that. Incubate your jars at 72f. Fruit at room temp should be fine depending on the size of the container and the amount of bulk substrate you use, smaller amounts of spawn generate less heat then that of larger subs. Metabolite's (active bacteria) heat the center of the bulk up just enough to keep a container at room temp around perfect temperature for mushroom development.
Easiest way you could do it.
