What could cause a fruiting cake to contam overnight?

My cakes have been fruiting for nearly 3 weeks. I've dunked some to attempt a second flush and everything has been going well.
I checked on them the other night and they were fine. Went in the next morning and the bottom half of one cake was completely covered in mold.
I tossed it. It's been a few days and none of the other cakes are showing any signs of contams.
Any idea what would cause that at such a late stage of the process?

Any sort of unwanted stuff getting in your FC. AFOAF had a casing get completely annihilated by mold overnight(less than 6 hours). Just motivation to be that much more sterile next time.

Contamination can happen on cakes if the mycelium becomes un able to defend it self. Usually as the cakes produce flushes they become more susceptable to contam.
Usually you should get atleast 2 flushes before contams set in.
Its possible that the cake was already contamed to behin with an that its now not strong enough to stop it.

Nothing will cause a cake to contaminate overnight. Most mold mycelium is white, so you just didn't notice it there until it sporulated.
Molds grow in stale, still air, so it tells you to increase your fresh air exchange. RR
