Martha humidity

I guess I really have one question about it. Whats the reasoning of not using a steam humidifier? It's probably obvious but I'm just curious i guess. Everywhere I've read says to use a cool mist purifier for the air exchange.

Steam is hot, so it will heat up the air inside your FC. When you heat up the air

A) your RH lowers. The warmer the air the more water it can take, and because RH (RELATIVE humidity) is relative to the total amount of water it can take, the % descends

and even more important

B) Inside warm + Outside cold = Condensation on inside. That condensation not only lowers your RH but the droplets can land on your cakes/casing and become a breeding ground for contamination

Alright I'm not one of those people who has to contradict everyone but I'm just going off what I am observing. I've had the evaporator running all day and the humidity is right at 99 percent while them temp is right around 70. My tubing connecting the martha and the humidifier is about 6 feet long and from what I can tell the air is cooling while it goes through the tubing. The outside room temp is about 68 degrees which I think is helping with the cooling.

As for condensation there are very very tiny bead of water on the top but nothing heavy enough to drip. The only downside I am seeing right now is the possibility of contaminations growing in the condensation.

Could I add peroxide to the water to around 10% solution to counter this? I'm not sure if that would hurt the cakes but it would be an extremly good way to combat contamination if it is possible.

Probably not. I doubt that the peroxide would stay in peroxide form for long enough to make a difference, and besides, if you're temperature isn't high in the first place, then it's not really an issue. You're probably fine the way you are.
