Harvesting PE w/ mites

if mites are found to invade an active flush, is there any risk to going about business as usual, drying, then consuming? please advise.

You can still consume them as far as I know. If you fan dry first that should blow the mites away, then throw it in a dehydrator.
I have never dealt with mites but that would be my plan if I did.

Mites can lay larva in the fruit bodies of the maturing fruit depending on how heavily infected your casing may be. I have harvested off heavily infected casings before and dryed without issues, I had more then enough people gobble them up without a care....
I tryed some too

I am very familiar with mite infestations (bastards). They don't lay larvae. Maggots (larva) in your crop are from fungus flies (gnats) that lay eggs in the mushrooms and/or casing depending on the species.
The mites (also depending on species) primarily feed on molds and tend to spread them around and sicken the mycelium over time. They can multiply into huge numbers quickly and can be irritating as they crawl on your skin during harvest time. I have used household bug bombs to knock back or even eliminate mite infestations in a growroom after disposing of all crops, but they tend to come back eventually if you aren't perfectly clean. They are so small, most people don't even notice them unless they are in huge numbers.
Commercial growers don't reject mushrooms grown with low numbers of mites, so they should be fine for your purposes. They are only on the mushrooms surface and tend to fall off during drying which also kills the mites.
