Discoloration in a sterile jar

I'm noticing a slight discoloration in my popcorn spawn jars. I know it is not contamination, because the jar had never showed any contams, and most of the grain was colonized.
The discoloration is a little yellow, appearing to stain the mycelium.
I'm wondering if it has something to do with the popcorn itself. I remember these jars, with the yellowing, were in the PC for too long, and some of the kernels were brown and caramelized. Could the color be a byproduct of breaking down certain compounds?
The color has not spread, just localized in a couple areas. Btw, these jars are very, very slow at colonizing. I didn't get them knocked up evenly--too much popcorn, not enough room to shake em' up. I think they are almost going on 30 days now! While my other new jar only took about 12 days to colonize--it had room, and the corn was not overcooked.
Here's a picture:

I just checked my jars which are almost 100% complete and saw the same thing, just a few days ago they were fine. This happened right after I put them in my new TiT setup, I think it has something to do with temps being a couple of F higher, today I discovered that the sensor that was in the inner tub reported 83F on the side wall and when placed in the very middle of the tub, the temp shot up to 85F so I immediately lowered it a few degrees.. Even tho the cakes are fine, I now STRONGLY believe that the perfect temp to keep the jars is somewhere around 79-81F at all times and 86F as stated in some teks is infact too hot. Just my experience.
