Which edible to grow?

I have a very high end Italian restaurant that said they would purchase edibles from me if I can incorporate them in to their menu. They mostly use porchinis, or wild edibles in the respective seasons. Does anyone have a suggestion as to what I might be able to cultivate at home, and still fit the Italian style menu? Thanks so much,... you guys rock

Hi Glacier, i'm Italian 
Listen to me, here people are crazy for Boletus edulis, but eat a lot also Pioppino (Agrocybe aegerita) on tagliatelle and garlic.
A good mushroom to sell could be also Pleurotus ostreatus(with potaoto in the oven) and Armillaria mellea (for tomato soup on fettuccine or tagliatelle).

Thanks so much! So these are able to be cultivated indoors? Sorry I am not very familiar with edibles yet, but feel I am ready to take the plunge. Thanks for a point in the right direction!

boletus are not cultivatable yet, maybe in 10 years someone will find a way. piopinnos and oystres are though.

As casgoodie said Pleurotus ostreatus(Oyster), Agrocybe aegerita(Pioppino, with double p, rednecks!), Armillaria mellea (Honey Mushroom) are cultivable. Boletus edulis unlucky no.
You can also sell a mix of Lentinus edodes(Shiitake) and Pholiota nameko to make fettuccine. With a little of garlic they taste wonderfull and Shiitake and Nameko are cultivable too.
