It can cause settling. But it should always remain white. Also it tends to bind in a clot if you don't agitate well before cooling.

its viable... same happened to me and i knocked up some full pint jars and there almost fully colonized at its been about 7 days now. ridiculously vicious Brazilian shit. good luck man.

ive just had good results from a tester jar i done on a lc that didn look nothing like my others and i birthed it today and it only took 9 days to colonise, but it looked like lots of say coconut peices ? if you get my drift no clumps or nothing, what strain are we talking ?
souldn make a difference but mine was hawaiian, and totally different from the text book lc appearance

If using Karo it can sometimes be over P.C.'ing. I have the flakes before w/ Karo and it wasn't even mycelium, but carmalized Karo.

( at least for your honey) use a syringe to draw up the honey in 4 cc intervals however many times you need to do it to get your voulume.
Going over board makes carmalizing an L.C. easier IME. I always keep the formula tight and the pc time exact for 20min. on the heat after the pc seals.
