Revised Chocolate Dessert

So here is the revise chocolate foam dessert, I tweaked the foam so it doesn't have any dairy resulting in a clean finish and pure chocolate flavor. It's egg whites, chocolate and chocolate consomme bound with xanthan gum. Sauteed pineapple replaces strawberries and the macaron was also redone to be lighter and easier to eat, I powdered the caramelized puffed rice for a cleaner presentation and for a more interesting texture contrast. Pistachio ice cream stays the same, addition of nougatine chips as garnish

How much would one of those dishes cost? Do you do any sculptured sugar deserts?

I personally havn't done sugar and/or chocolate sculptures or showpieces since graduating cooking school, but I did take two elective lab classes that focused specifically on showpieces so I do have the fundamentals to do basic forms, however that is an altogether different discipline within the pastry kitchen(wedding cakes too) they also require completely different equipment, ingredients and technique. I specialize in plated restaurant desserts and petit fours. It's all about flavor for me.
oh and yes, I did realize that the chocolate foam on top looked a little "pooish" but I wanted to get some height off the plate as well as make it easy to eat. To often you see plated desserts that look so delicate and fancy that you almost feel guilty for ruining it with your fork or are difficult to eat because of how the components were plated, everytime I come up with a new dish I always take into consideration how the guest will end up eating it and make sure the flavors are tasted in the order I would want or in this case making sure all the flavors are easily tasted in one spoonful, this creed always takes a back seat to presentation in my view, but sometimes I will come up with a presentation for a dessert way before I figure out the flavors.

hehehe, yeah i also noticed the appearance of poopy poop.
Would you consider putting the foam into a mold? Or is that even possible?

this dessert is a riff on a sundae so the foam serves as the whipped cream, but because it doesn't actually have any dairy in it, it's extremely light and clean on the tongue and doesn't leave that cloying fatty feeling that something like whipped cream would. It's chocolate consomme thickened with xanthan gum and blended with pasteurized egg whites, it's charged in a whip canister.

now that you explained it out it would definitely seem interesting to eat.
