If the jars contain a lot of burst kernels (maybe a little less than half), but it doesn't look like there's an excess of starch (although I'm not sure how there couldn't be) should I just go ahead with the inoc? I've heard of people doing well with burst kernels and even heard that they don't necessarily effect the colonization time. The grain is easily shakeable and the water content looks right on. No white starchy looking anything inside... Really anxious to inoculate, what do you guys think?
Also, what causes a burst kernel? Are they preparing to sprout (too much water) of have they popped due to thermal expansion (too much heat)?

Often, they'll bust if you boil or simmer without allowing a few hours of soaking time to soften up first.
To prevent germination during the soaking, be sure to rinse the grains first several times with very hot tap water. Begin the soak with hot tap water. This will prevent the seeds from sprouting. RR

Nice, thanks..
The ones I was worried about did get a hearty soak.. about 14 hours, and it didn't look like they were germinating, just cracked open kind of.. although that does happen during germination...
Is it possible that whole grains crack or pop because the simmer gets out of control and tries tov force too much water in to the kernel?

No. The grains won't take on more water than they can hold. After a 24 hour soak, I once accidentally left the water in a rapid boil for nearly an hour. There were no burst kernels and they weren't any fatter than they'd have been after a ten minute boil. I used them and they were fine. The secret against cracked kernels is to soak the grains first, and then to heat the water and grains together slowly. RR

I rinse my WBS off with steaming hot bath water. Soak for 24 hours. But I sometimes still get germinating millits.

Wierd, check this out..
I tried to repeat the process. This time I made sure that after simmering, none (next to none) of the grains had cracked. Then I PC for 90 min and tons of the guys have popped on me... I'm just gonna knock em up and hope for te best, but I'm starting to think that its the heat in the PC thats breaking em... what do you think?
