Discovery of alcohol dehydrogenase from mushrooms and application to alcoholic beverages

So I was trying to find some information on brewing mushroom beer or wine, and although I found some little bits of information on psilocybin wine, I stumbled upon a reference in a brewing forum to an article titled "Discovery of alcohol dehydrogenase from mushrooms and application to alcoholic beverages" from the publication "Journal of Molecular Catalysis B: Enzymatic."

At first I figured it would be a bit to "scientific" to be worth looking into, but I was curious, and was able to find the article through an online publication database linked from my school library's website.

Here is a link to the article's abstract.

The article talks about using a few different species of edible mushrooms in the place of yeast in the fermentation process, as they have been discovered to produce alcohol in the anaerobic fermentation of beer, wine, and sake. The beverages produced retain the flavor of the mushroom used.

It is a bit long to post, so I suggest those who are interested and can obtain the article to do so (if you are a college student, you may be able to gain access via your library's website). I would post the contents of the article that pertain to fermentation, but I'm not sure of the rules that apply to posting directly from sources like this. If anybody is interested in this, let me know and I can post some of the good info (or i can share the whole pdf if that will "fly").

I'm very curious about that. also, what did you find about psilocybin wine?
