Ready for birthing or not? (pics)

I have six half pint cakes like this; the top half inch/inch is not colonizing, and theyve been otherwise fully colonized for a couple weeks. If I remove the tape, or retape, shake or flip, I do not see an difference. Do they look read to birth? Or will the uncolonized top area definetely contaminate? They are half pint pre-sterilized jars from mushbox.com, im not sure how they make theirs but this could be normal as it's a layer of vermiculite on top usually, right?

In pf style jars, there is a dry verm layer which acts as a filter for contams, this will not colinise as it has no moisture or nuitrients.
usually the dry verm layer is only an inch thick at the most. That looks to be a good few inches, if that is the dry verm layer, which i think it is, then they are ready for dunking then rolling and into fruiting chamber _

birth it and soak it in water overnight in the fridge that will help it rehydrate

OK, birthed all 6 of them. They are dunked now, though not in the fridge.
Do I need something to weigh them down (theyre floating, with onl a half inch or so above water) or will the absorb enogh water overnight? only asking because I have nothing clean available to weigh them down with in this awkward container...

I weight them down with a saucer plate or ceramic cup .. anything clean enough to eat off of is good enough .. the fridge is better as it discourages bacterial growth so put them in a fridge .

actually, dunking at room temp is better than in the fridge. and i find it much easier to dunk them in the jars. less chance of spreading any contam to other cakes if you didn't see any contams, and less containers to clean up

i dunk in a quart size double seal freezer bag with no air in it, i then stick that bag into a gallon size freezer bag with water and ice in it so it'll stay cool over night
it's the best method i've found for stealth, and its cheap and way way easy
easy clean up here too

Why would it be better to not put the cakes in the fridge? I wonder if pinning occurs on all levels of temperature reduction, relatively speaking.

There have been many discussions about cold shocking. Do a quick search and they'll appear . Some people say they do it for every cake, some say they do it only for troubled cakes (almost a shock or kick for the mycelium to try and save itself by propagating), and others say that cubensis being a tropical mushroom abhor being cold shocked and you should never do it.

there is no truth to cold shocking a tropical mushroom species its strictly to help fight contamination . the separating of the cakes while soaking now thats a good idea ..

Another good reason to use the double seal plastic bag method, you can use sandwich interior and quart exterior if you want to keep the cakes separate

Temperature reduction is not a pinning signal for cubes. Cold shocking for cubes is a myth.

But strangely enough if you put food in that fridge it will go bad much slower than if it was left outside, even if there are less contaminants around...
Not only are fully colonized cakes pretty resistant to contams but the cold reduces the activity of those contams hugely. You can keep a bottle of fresh milk (pasteurized) for a day outside of the fridge but for a week inside it.
Dunking inside clean and covered containers can be done even in the filthiest of fridges

how could that possibly be the best stealth method? just pout water in the jar and continue to store them wherever they have been colonizing. no sense in messing with bags and ice and whatever else. take the jar - add water- put the lid back on. fin.
