Thougt I'd try growing some pink oysters pf-style, so far it seems all good! Just wondering what the best way to preserve these when picked (or can I?)
THX

Looking good!

Refrigerate oyster immediately after you pick them, and I put them in paper bags. They'll keep 5 - 7 days like that. If you want them longer I'd dehydrate them, and then rehydrate with 50/50 warm water/white wine or broth when you're ready to cook (They can be added to soups dry as long as you simmer until they're tender).

you could freeze them. lay them out separately on a sheet of some kind separate from each other and freeze them. Then you can bag them together and store them in the freezer. if you bag them fresh then you'll end up with a giant clump of frozen mushrooms.

when freezing my pinks i usually saute them in butter with a little garlic first. That way they'll be ready to go whenever you need them.

Good luck and make sure they get plenty of fresh air over the next few days.

Definitely dry them or cook and freeze as mentioned. Drying them well is my way of conserving mushrooms. Although I know numerous people that do what waixingren does. Whatever floats your boat.

Those cakes are looking nice by the way.

and just reconstitute them when ready to use them in recipes?
