Why not sterilize straw?

According to most teks you need to pasteurize straw if you want to grow oysters on it.
As far as I understand you shouldn't sterilize it; why is that? Wouldn't it be better to kill more bacteria (that's what sterilization does)? I hope anyone can explain this to me!

1) It´s a matter of viability and money. If you had to sterilize 100 Kg. of straw imagine how difficult it would be to manage that amount of straw in sterile conditions, inoculate it, spread the spawn, everything sterile.
2) Imagine also the big fat autoclave and lab that you would need for this.
3) Pasteurization is cheaper and you can get 100% BE easily with oysters.
4) Non supplemented substrates require no sterilization.

Bacteria are beneficial organisms in bulk substrates. If you sterilized straw, and then left it open to the air such as in a tub or laundry basket, it would contaminate with green before the mushroom mycelium could colonize it.

Both of the above comments are correct. But if you are doing smaller amounts of straw and can keep it sterile after cooking and while colonizing, it will work fine. Oysters will grow and fruit on sterile substrates.

..yes, it works but really unecessary if the substrate isn't buffered with any protein like the ones in the bran. So why spent time?

Reading Mycelium Running by Stamets i've understood that mushrooms like to digest bacteria (for example see the Mycofiltration)! A kind of meat in their vegetarian menu? :tongue2:
