Too early to harvest?

My mushrooms are about the size of a quarter in height, with a few the size of a half dollar, but not anywhere near as big as I see some on this site. However, it looks as if their ring is showing and the caps are about to break free. Should I harvest all of them, even though some are still pinheads? Or is it OK to wait till they get bigger? This is my first flush and time growing so I'm not 100% sure what to look for.
Another issue is that my fruiting chamber gets as low as 55 degrees, but over the night I put a space heater on and it gets warmer. Is this fluctuation harmful to the organism? I know the low temperatures probably explain the very slow growth rate, but will they kill the mycelium?

wait for em to get bigger, i like to wait for the caps to open up...and you can always pick more mature ones and let other get bigger for a day or so
the temp isnt good, keeping it above 70 does help, although your myc probably wont die because of 55 degree temps

The lower temperature wont hurt them, but just slow growth down. When the veil breaks they wont grow much bigger.
Harvest when the veil begins to tear, or if you want prints wait till it has broken complelty and the cap starts to flaten out.
Small mushrooms are an indication that there is lack of moisture, either not enough humidity or dehydrated substrate.

I don't think I used enough perlite in my fruiting chamber, and there are a load of holes and an air pump as seen in the poor mans pod. I can spray them a couple times a day to compensate for the lower humidity, that will be ok right? I get nervous when soaking the cakes with the mister because of the possibility of mold, but the cooler temps will probably inhibit that a bit...

nah, fully colonized cakes are strong at resisting contams, dont worry too much in that department, but make sure you keep the misting up a couple times a day, just not directly on the cakes, i like to get the walls and just spray the air about a foot above the fc... i had the same problem a while back with 6 1 pt z-strain cakes, i had a great first flush, 26 dry grams from the 6 cakes, and a crappy second flush (probably about 5 grams) cause i forgot to keep misting, now i started misting everyday for the 3rd flush and the pinset is really a thing of beauty, pins all around on every cake, i really wish i had a photograph apparatus probably lookin at another half oz, w00t! moral of the story is if your concerned about your humidity....mist!

Let the caps open as much as they can.. picking early is dumb. Just before they drop their spores is ideal.
