Dunk and roll?

During the dunk and roll if you refrigerate during the dunk for 24 hours will it affect pinning or fruiting? If so,than what.

It may set things back a day or 2.
Personaly i dont recomend dunking in the fridge, cold water is fine, but alot of people would recomend it as it slows the growth of bacteria that will be in the water.

I think people also use the refrigerator as a cold shock for the cake - perhaps as a catalyst for the change to fruiting mode? not too sure about the research that has been done in this area but i have had very positive experiences from dunking in the frig for 24 hours. I think all my dunks have been done in the refrigerator. I have a bunch ready to dunk. next time i will do half in the frig and half outside of it. See what changes i can notice. Sorry if this doesn't help. just my experience.

you dont cold shock cubes... please dont spread misinformation.
The fidge is not needed.. but does not hurt. some people like the fridge because of the still cold air which helps ward off contam. If i ever dunk and roll i will stick my cakes in a bowl in a sterile rubbermaid tub with a lid on it...

putting it in the fridge is good to keep contams from spreading, it's controversial weather or not cold shocking helps cubes pin or not.

I would point out that the fridge is a good breeding ground for many bacteria. Its far from being sanatary nevermind sterile

Bacteria are everywhere, and while you might think that there are more bacteria in a fridge, they also spread a lot slower.
While a bowl of mayo will spoil in a few hours at warm room tmperatures it will last days in the fridge. Cooling slows down bacteria growth exponentially, which is why we refridgerate.
P. Cubensis are a tropical species and DO NOT need to be cold shocked
