Spawning to Coir

I have been reading up lately on casing and spawning and I want to make sure that I have it all understood. I have used the search feature and read everything on the site about growing, I just want to make sure that I understand the correct way to do this. I want to spawn to coir and then case it. From what I've read and understand from it, you put a layer of crumbled colonized substrate (I have BRF jars) on the bottom then layer the coir and put another layer of substrate on the top. After this do you incubate the mixture, and if so at what temperature? After this mixture is fully colonized I will then case it using the 50/50+ tek. This is my understanding of the process and please correct me if there is any problems in it. Thanks for your help.

Just mix the spawn with the coir wait until fully colonized then case.

So mix in the spawn all around with the coir and not layer it and also when I am waiting until fully colonized, should I put it in the incubator or leave it at room temp? I saw on oatman's spawn tek he layered the spawn and coir. Should I add in coffee grinds, I have seen posts about adding them in?

Definitely add some coffee grinds. I mean, why not? Extra nutes and the acidity helps a bit too. Plus, Starbucks will give you a fat 25lb bag for free if you ask(and for most people, starbucks is just down the street).

Should a sheet of plastic be placed over the substrate? I read somewhere that this prevents pinning, allowing the mycelium to get a really good hold of the substrate. Is this accurate?

Yes, you want it to fully colonize before you trigger pinning. Saran wrap or foil will work, just put a couple holes in it

Remember to use USED coffee grounds.
Also don't use saran wrap or foil, wax paper works the best

RR made a valid point in a similiar post this week saying to be sure to keep a little extra coir/coffee or whatever you bulk is to cover the top of the mixture. When BRF, grains, ect are left on top of the mix, the mycelium can die back on the surface exposed grains/cake and leave them in open air for contams to attack.
The bulk substrate has been PH adjusted to prevent this from happening long enough for the bulk to be colonized, but the exposed grains or cake pieces are not, and would become contamed much faster. He said he layers his, leaving nothing but bulk on the top, but said mixing is fine as long as you cover all the exposed grain or cake pieces with some of your coir/coffee or whatever as a ph 6-7.5 shield.
If I screwed this up in any way feel free to correct me, but I think I got it right.

If you cover with coir (like a casing layer) is a casing layer needed later?

Yes, because you are going to fully colonize your coir/coffee mixture in the dark, with minimal air exchange for about 5-7 days.
Then once completely overtaken you will either case with your choice of casing mixture, or not case and induce fruiting conditions right away, and just cover the colonized bulk with a piece of wax paper, until pins start to form.
This is your choice.
If you are not casing, you will have to keep the relative humidity up about 10 to 15% higher. Hope this helps.

Alright I have it all pretty much down now except the PH. I have no way of checking the levels of PH. Do I need to find something or if I follow the measurements exact there will be no problems? What is the ratio of coffee to coir?

80% coir to 20% coffee
And for PH add some gymsum powder to the mix

That ratio is not set in stone, but it worked well for me. 100% coffee works, as does 100% coir, so you can use any ratio you desire.
