patch and mist, but depends on the setup. I use a standard double tub, so I just patch mist cover and wait.

after letting the tray "rest" for a couple days, i dunk my casings by propping them up on an angle in the kitchen sink and running cool water into the tray for about 60-90 minutes. the constantly running water helps wash away any contaminates that have landed on the tray since fruiting. still water dunks only serve to evenly distribute any contaminates present...
the rest period is simply because, after fruiting, the mycelium needs time to recover before it's ready to attempt the next flush. if you dunk it immediately, it's still going to take these couple days to rest, but now it's going to be losing all that wonderful moisture you just hydrated it with during the dunk in the mean time. By letting it rest for a couple days, you're simply optimizing the moisture content for the next flush.
