the shrooms only felt dry because all the moisture was sucked out of the outside of the shrooms. when you put them in the bag they sort of sweated out the moisture that was trapped closer to the center.just like when you cure pot.

No. Your just drying them. Curing is really just for pot and tobacco.

Yeah, they probably just got a little moisture from the air, just enough to make them bendy.

Depending on your average relative humidity, your shrooms will consistently absorb atmospheric moisture if they are not supplied with some sort of desiccant. They are like potato chips that have been left open. They'll get stale. They will not lose potentcy from getting stale. Unless your average relative humidity is below say 20%, stick one of those silica packets from a pair of new shoes in with them and they will stay supah crispy!

ideally, for long term storage of dried mushies, you should get your hands on a supply of oxygen absorbers.  They work by containing little packets of iron powder.  Any ambient humidity forms on the iron, causing to rust, which sucks out the oxygen of the container along the way.  Kills minor amounts of extra humidity and all oxygen in the chamber as well.  Easy, breezy...

Keep in mind that inoculating or whatever in front of a flow hood won't help your bad substrate, your bad inoculant, your bad sterile procedure, etc. etc. etc. It's not a +3 flowhood of magic, it's just a tool.

Or, if you want to make the investment..... Here's my best friend!

I like to collect HIGH QUALITY herbs like "dro" and things of that nature. I have stuff from last year that I still partake in and have noticed NO QUALITY LOSS WHATSOEVER! Food Savers are worth every penny in my opinion.

^^^^ what he said times 100000000000

I managed to find one of those at a thrift store for $5... it is a real simple one though just has two buttons, but it works great.
I seal them and toss them in the fridge... and I opened one after a month.... still crisp and fresh... I would say they would last for a very very long time in there.
