Baked Linguini & meatballs~ * 1

I'm just going to summarize this here real quick as it's going to be out of the oven very shortly. What I did was I boiled some linguini, then I ran that under some cold water to stop it from cooking further, oiled it and set it aside. Grab a mixing bowl, add some tomato paste, apple cider vinegar, red wine vinegar, white truffle oil, chives, ground white/black pepper, salt, basil, thyme, a bit of water, garlic mix that all together like so;



and set that aside.

Get a sauté pan, add butter, melt that, add garlic, salt, ground pepper, a bit of rubbed sage, crushed chili peppers, some white onions, some shallots, I used some frozen meatballs, cook that all till the balls get tender and the onions are al dente. Once that is so  add some white wine, some chives, some more thyme, a bit of cream, and I think thats it. Kill the heat and set aside.



Then you'll need about a 9'x11' pan I think thats what size this. I used glass but if you use anything else you might need to dose that with a bit of olive oil or butter. I plopped all my linguini all up in there added some olive oil and toss.



Then acquire that delicious tomatoe paste and vinegar concoction and pour that over the noodles and mix that around like so ;



Now cover that with some delicious spinach, cover that with some mozzarella dose it with some delicious olive oil, chives ground white pepper, a splash of thyme just a touch of smoked paprika.



Now comes the fun part, place the meatball ooy gooy sauce all over the spinach

pre cheese;



post cheese;



Splash some more chives/basil/thyme a generous amount of porcini oil and some pepper. Then put that in the oven for about 20-30 minutes at 300º. MMMMMMM~ Enjoy.

oo I forgot the fresh rosemary. That goes in there in the sauces and what not. :laugh:
