What is the preferred method of removing verm and casing materials from picked fruit? While fresh... dried... partially dried? What about the entangled mess at the base of the stem?

For manure based substrates, I recommend cutting off every below the volva (the area where the stipe/stalk leaves the mycelium) altogether while fresh. Save those little chunks for your brewed teas if you'd like...they're still useful but considering the nature of manures, pasteurized or not, hot-water brewing is often a "safer than sorry" situation.
If it's not a manure based substrate and you don't mind having a chunk of mycelium along with the volva attached, the easiest way to clean the area up is to dry the thoroughly via your favorite dehydration / dessication procedure and then firmly brushing the volva and below to remove any dried pieces of substrate/casing/etc. that may be locked up into the mycelium. The tooth-brush suggestion works great when thoroughly dried...
As always, YMMV...

I always twist off the bottom of the fruits where the tangle of mycelium and casing material/substrate is. It's the fastest way if you aren't extremely concerned about getting the most possible amount of usable fruit possible. Most of the time, I through all of these bottoms in to a large jar. After time, these bottoms start to grow together and will produce a few fruits. It won't produce enough to affect biological efficiency or anything, but it's an interesting process to watch.

I found this thing at giant eagle called a "mushroom brush" it looks like half a wooden yo-yo with a bunch of soft bristles on one side. Obviously it works wonders for this purpose.
