i have a question... what if you use substrate jar tek and the jars start cultivating at different rates?? are u supposed to just keep them until they are all cultivated or are u supposed to start birthing them ?? does it make a difference how long the mycelium stays in the jar after its fully covered ?

Depends on what you are doing with them, if you are making cakes then just birth each one as it is ready. You should give each jar at least 3 days extra after you see them completely covered, to make sure the interior center of the jars is also finished. Just because the outside is complete doesn't mean the inside is.

No nothing will happen unless it has frequent air exchange and other triggers for pinning But you would be better off putting them into the fridge after aweek or so untill the rest are done I just birth them once they are a week fully colonised and birth each one at times they are ready if all are colonising at different times

If you are casing you might try dividing them up into groups depending on speed and casing them when a group is ready.
