of colonization and if your doing cakes and not casings do you still have to wait 5-7 days so the core gets colonized as well??? I dont think the middle has anything to do with the cake unless your casing...

It is best to wait 4-7 days after surface of cake is colonized before initiating pinning or casing it. This is just to make sure the inside is colonized too, reducing the risk of contaminations when and if you case.

Ya me to, Birth fast as possible. once the outside is 100% cover with Mycelium it has a pretty good network of growth and can fight off airborn contams alot easyer and should! be alright. I my self would take ever how many you have and use 70% for casing and the other 30% for cakes. That way you well have a long term thing with the cakes and once they start kicking good you well have super amounts of mushrooms growing from the casing in the fruiting chamber or what ever you might be growing them in.

I birth them right away. If the entire outside is covered, and the length of the outside is longer then the radius of the jar (if you are using a regular and not a wide mouth) you wont have a problem. The inside should be fine.

Well, I just mean that it should be about the same rate for the mycelium to crawl down the jars as it would towards the inside. So if the jar appears to be completely colonized, then that means that the length of the jars are covered with mycelium. So, if the radius of the jars are shorter than the length, by the time the mycelium reaches the bottom, it should most likely have reached the inside of the cakes also. Unless of course it is harder for the mycelium to eat through towards the center...but i really doubt that.
