when is first flush finished?

so....i'm beeen wondering.. my cakes have beeen pinning like mad and i dont know how to determine when the first flush is over? after some matured...more pins just keeep on popping out? at what point do i take everything off and dunk again for my second flush?

you don't take everything off at any point. Harvest all mature fruits, leave the pins (harvest black pins) and allow it to rest several days without any misting and humidity at ambient (50-60%-ish) levels. Then on the last day allow it to sit under a cold-water faucet running for several hours. The running water will hydrate the cake and wash away any contaminates.

The colony will rest for several days before pushing new energy into the production of fruits. Dunking/Hydrating before this only allows it to dry back out during this rest period and potentially exposes it to new contaminates.

Dunk all the way. I dunk for 12 to 24 that's good time.

After that your good to go. I always dunk. Moisture is good ju ju.

the big buzz is not letting your cakes sit in standing water.
The running water technique ensures it washes away old contams, and does not let new ones settle.

Dunking in water is fine, and hydrates the cake better than other methods, after finishing dunking u can run them under the tap to wash them.
