Shiitake Stems-Waste Not!!!

When I harvest my Shiitakes, I can't help but to eat the first one I pick raw. I have always noticed how the stems taste better, actually sweeter than the cap, but they are so tough that they are totally inedible. In spite of this, I treated them sort of like chewing gum, and proceeded to eat them anyway. All this has now changed after today!
I ate my experiment this morning, and I am so pleased with the results that I feel compelled to post it here! These were definitely the best scrambled eggs I ever tasted, and anyone who wants to eat better tasting scrambled eggs, and not worry about the cholesterol has to try this!
First, I took the fresh stems that I cut off the caps and divided them up into thin pieces by pulling them apart with my fingers rather than cutting them, the way you would pull apart string cheese. According to P.Stamets, this preserves the integrity of the cells. I then completely dried them until crisp.
I used one of those Black and Decker coffee bean grinders to reduce the stems down to a powder that had the consistency of flower. Then I mixed two teaspoons of the powder with two teaspoons of milk (you could use water instead). After letting the paste sit for a couple of minutes, I added it to four eggs and beat it all up. If you really don't care about cholesterol, add a dash of shredded sharp cheddar cheese, then cook it all up to perfection in the skillet! Awesome gourmet scrambled eggs!
This is not going to end with scrambled eggs. I plan on dumping this stuff into a number of different soups in the near future. How about sprinkled on pasta? I think I need to buy more Oak logs!
The medicinal sugar(the Lentinan), is more concentrated in that "inedible" stem, and hence the sweeter taste. I asked a professional mycologist about this at a NAMA foray, and he confirmed my suspicion. The neat thing about the powder is that it is rendered more easily digestible, and more of those medicinal goodies will get into your body rather than being passed out as poo!

great idea! i make mushroom powders out of morel and porcini remnants too. used correctly they are quite delicious in recipes.

I do mushroom flour out of Boletus aereus and aestivalis. These mushrooms grow in the summer and they´re always full of insects and larvae. I cut them thin and dry on a wire mesh. Once dried most of the larvae are gone or dead on the floor. Then I grind the slices till they get to a flour consistency. I use this just like any other flour but things taste much better .

mm I've never thrown away stems. Even just boiling them extra long makes them suitable ( sautéing with a lot of water added and waiting till it all evaporates seems to work well for me )

having grown hundreds of pounds of shiitake i must say that anyone discarding the stems is a fool.
stems powder well and powder is extremely versatile. powder is "exotic"; you an easily sell powdered stems for over the price of the fresh/dried carpophod.
i always dry my stems and bug-eaten rottens separately and that makes up a very profitable powder that can be sold as-is or in soup mixes.
actually, depressing as it sounds, the beautiful fruits are probably the least profitable because so much effort and care is put into getting the perfect product to the end customer (!consumer).
