they like the rest period. After harvesting a flush, both on cakes and on bulk substrate trays it's a good idea to let them sit there for a day or two (3-5 for bulk trays) before dunking or reintroducing fruiting conditions.

This is because the mycelium needs time to recouperate from the stressful experience of flushing and being harvested. After that time it will pick up where it left off and start to push up the second flush of mature fruits from the (in the case of bulk trays) existing pins or attempt to produce new pins if none exist. It's just before this recovery period is over that you want to dunk and then repeat the fruiting process...

In your case, specifically, your neglect is allowing the environment to change out of the "ideal fruiting environment" long enough for it to rest and then, once you come back to give it some TLC you're really telling it's time to get off it's lazy ass and do some work again.

Did that make any sense or did I just talk myself into a circle?

Keep in mind that inoculating or whatever in front of a flow hood won't help your bad substrate, your bad inoculant, your bad sterile procedure, etc. etc. etc. It's not a +3 flowhood of magic, it's just a tool.
