Vinegar Smell

Because of a lack of funds, I used a salsa jar for a PF cake. It took a while to colonize (4-5 weeks), probably due to overheating while they were left in the care of a friend while I was away. The jar did fully colonize with only slight bluing. I definately left it in the jar too long...about 3 weeks after fully colonized. When I took it out there were no visual signs of contams, but there was a strong vinegar smell that filled the whole room. Is this a sign of a contam, or could it be that it was just left in jar too long and something began to rot or ferment?

do a bleach dip,
it should kill the bacteria
and leave the cake fruit-able.
