PF cake fruiting question

This is my first grow attempt, and I'm happy to get something out of it, which it appears I shall. But I'm wondering what the white tangly mass is on the right of this cake. It doesn't seem to have a head.

Those would be what we call mutants. You can pick them off and dry for consumption. RR

Is it correct that mutants are generally caused by using tap water?

Thanks so much Roger. I wasn't expecting the big guns to come out just for little ol' me.
EDIT: So should I pick the mutants off now or wait until I harvest the good fruits?

I'd pick them as one solid flush from the cake, they should mature at pretty much the same rate as the other pins. As for what causes them, it's genetic. Some deformities are caused by environmental factors but mutations are luck of the draw from the genetics. Not uncommon at all in multispore inoculations...
