I think the literature suggests 60 mins @ 15 psi minimum regardless of size. Feel free to correct me if I'm wrong.

Agreed. How are you going to get the cake out of the quart jar? If you're going to attempt this I always cook for more time the more volume i'm taking up in the pot/pc.

You can use it to case.. that's what I'm doing because I just started and don't want to get into grains yet.

Quarts don't work. The weight and density causes the brf to pack down tight near the bottom and that part doesn't colonize. Stick to 1/2 pints and stack them later after colonzation if you want a larger substrate. Pints work, but not as well as halfs, and certainly not as well as two 1/2 pints stacked.
When not using the pressure cooker, I steam 1/2 pints for 90 minutes. It doesn't overcook them by any means, and it insures the mold spores and bacteria have been executed. RR

They're a tad over a pint. Steam for 90 minutes, but don't start counting the time until steam is escaping from under the lid on your kettle. RR

Here is a noob question.. When you say they don't work as well, does that mean:
1- Less fruiting, less product, less amounts of flushing 2- More time to colonize, fruit 3- Both 4- Other (explanation)
I have a case of 1/2 pints on the way and I was able to get a case of pints locally so I'll be testing with both methods.

he means, you are more then likely going to end up with a contam, because the weight of the product in the jar, causes it to pack down on itself, which causes it to take a LONG time to colonize which means pretty much 98% of the time, contam's will set in first.
I may not have said it how RR would, and he prbly would other stuff. but i think, that would be the basic answer.
